Yacon is a perennial from the daisy family – related to the sunflower – and originally from the Andes, this plant is used for culinary and medicinal purposes. Eat the root raw or cooked. Use the leaves as spinach or a wrap. Make yacon syrup from the roots as a sugar alternative for diabetics. It’s also a great mid-story plant in your forest garden. A perennial in warm climates and an annual in cooler areas.

be careful with these, eating to much can dump a lot of inulin into your digestive system and cause bad gas like sun chokes can
when storing the crown it is a good idea to leave some of the smaller tubers to provide nutrition to the plant

You are mistaken when you say that you have to eat the yacon right away. It actually gets sweeter when you store it in a cool root celler and will continue sweetening for up to a month. I will check on a person who grows fields of the stuff for market and let you know how long they can be stored.

While the Jicama root is great do be careful as to where you plant it. The root is edible but the beans it produces above ground are poisonous. If you have pets that may get at the plant be very, very careful where you plant it.
Can I get a seed
My ya on don't taste sweet it taste like a radish. So I don't know if they need to stay in the ground I dug them out after first frost.

We grow Yacon and after a good wash eat it with the skin on when cooked. Everyone seems to say peel them.

tried first yacon today out of the garden it reminds me of nashi pear with a touch of ginger
I live in the Dandenongs the hills of Melbourne. I grow Yacon and never remove it and store the crown. It works even though we are in a temperate area. When it dies back, I divide the crown and replant and then in spring it all comes back. Sadly I didn't realise that they don't store like a sweet potato and left them in a basket on the bench. The were covered in mould within a 5 days and the smell. A waste of a about 4 kilos of tubers. Thanks for the tips of using the leaves.
